Pumpkin Pancakes AKA: The Most Amazing Thing I Have Ever Tasted

So I mentioned last week that I was able to score some pureed pumpkin and I told you guys just how happy it made me. Yes, I'm lame. Anywho- I've been pinning pumpkin recipes like crazy and itching to try each and every one I see. A few days ago I came across this recipe for pumpkin pancakes and I knew I had to try it. So, this morning I whipped up a little batch for Emerson and myself. I made a few changes so that I could utilize what we had on hand. Let me just tell you it was so good, I wanted to lick the plate. And Emerson? Well she had seconds and thirds! Seriously, if you like pumpkin anything, then you absolutely have to try this recipe. Pronto!

1 cup flour
1/4 cup whole wheat flour
2 tablespoons sugar
2 tablespoons baking powder
1/2 teaspoon salt
3/4 tablespoon pumpkin pie spice (or you can make it a full tablespoon if you really like the spice flavor)
1 cup milk
6 heaping tablespoons pumpkin puree
2 tbs melted butter
1 egg
optional: maple syrup, walnuts, whipped cream

Mix flour, sugar, baking powder, and pumpkin pie spice.

In a separate bowl, whisk together milk, pumpkin puree, melted    butter, and egg.

Fold pumpkin mixture into flour mixture and mix carefully.

Spray a skillet with nonstick spray and heat to medium. Spoon a small amount of batter onto skillet and cook for about 3 minutes before flipping over and cooking another 3 minutes.  You can make these as big or as small as you would like but I preferred them silver dollar size! 

Optional: Top with chopped walnuts, real maple syrup, and a dollop of whip cream.

And then try not to eat every last one because, yes, they really are that good.

Looks delicious! I will have to see if my husband will make these for us.....he is the pancake chef of the house.....lol
